Korean Beef Rice Bowls

This recipe is from the May 2017 issue of Parents Magazine. It was really easy and different, and we definitely enjoyed it!

  • ¼ cup soy sauce

  • 5 tsp brown sugar (packed )

  • 1 ½ tsp rice vinegar

  • ¼ tsp pepper

  • 2 tsp sesame oil

  • 3 cloves garlic (minced)

  • 1 ½ tsp fresh ginger (minced )

  • 1 lb ground beef

  • 4 green onions (thinly sliced)

  • 2 cups rice (cooked )

  • 1 tsp sesame seeds (toasted )

  1. In a small bowl, combine soy sauce, brown sugar, vinegar and pepper.

  2. In a large skillet, heat oil over medium-high heat. Add garlic and ginger. Cook and stir for 30 seconds.

  3. Add beef and cook until no pink remains, stirring to break up the meat as it cooks.

  4. Stir in the soy sauce mixture and white part of the green onions.  Heat through.

  5. Serve beef over rice. Top with carrots, remaining green onions, and sesame seeds.  Enjoy!
